A little over 17 years ago, I married my best friend. We celebrated on an amazing July 5th evening. We shared the evening with our family and friends and when it came time to cut the cake, all were in awe. We had the most beautiful 6 layer cake. It was covered in fondant, shooting silver and gold stars and white chocolate cupids. It was almost too pretty to cut... I said almost! As we cut into the cake, the gorgeous layers of chocolate cake and alternating raspberry and vanilla buttercream were revealed. I was thinking to myself "Score!" I can still remember how incredibly good it was. The cake was the masterpiece of Green Mountain Chocolate Co. My family often ordered their cakes for special occasions. Sadly, ours would be the last. The baker had to retire because of problems she had developed in her hands. The company was later sold and moved to MA. I recently found them but they are only making chocolate... No cakes. I have been trying to duplicate the texture of their cake for years. Last night I came close! I used my go to chocolate recipe but added a few extras.... I melted a 1/2 cup 60% chocolate chips in the hot espresso and I added one package of chocolate fudge cook n serve pudding. This cake was as close as I have come to duplicating our wedding cake. For this taste test, I simply frosted it with my darkest chocolate buttercream. The next test will come when I fill it with raspberry and vanilla. I will let you know how that turns out! Til then...
